 yummy side dish

i made this yummy thing.... that depending on your view of carbs you will either love or hate...


i have made it twice now.... and both times it was a big hit here....


the first time was a bit "spicy" (according to my hubby who has ulcers)

2 potatoes
1 lg sweet potatoe
1 lg white onion
i cant believe its not butter spray


dice these in a oven save bowl or small pan.... add a splash of ginger a little garlic... chicken bullion (hubby added salt after cooking) and cook till tender.... we served it with a little sour cream (you could probably cut the fat by using low fat.... but we just use less of the regular because of taste issues)
(it served 5 btw)

the second time i did it i used

1 lg sweet potatoe
2 lg carrots
1 med sweet red onion


diced all the vegies...sprayed with i cant believe its not butter spray.... little pepper.... cooked till tender.... it was so good~!!!!!~ it only served 2 but it was good and low cal and filling and yummy
