I Always consume at least 1200 calories a day through food. But I usually have my last meal or snack around 7:00, 9:00 at the latest (on days that I go out and drink, which is about 4 times a week during summer). Then I don't go to bed around 2:00. Will my metabolism slow down? How can I prevent this? Thanks for any help :)

Probably not. I would not worry about it.
Just make sure you get enough sleep after those nights. Not getting enough sleep is bad for your health, and it will also make you less active, so you'll be burning fewer calories if you are sleepy and tired all day and not moving much.
