Small or large - I love them both. Here in Texas the large lima beans are Butter Beans. Hmmm, I think I'll have to get the crock pot going when I get home...

Have you ever tried Succotash? It is so yummy!! There are tons of ways to make it (including the high fat cream way). I found a recipe for those who are not familiar with it although I like 1/2 corn 1/2 lima beans, this one seems to have more corn than beans:
4 ears of sweet corn, husked
1/2 cup water
1 cup frozen baby lima beans
1 tablespoon butter or margarine
1 tablespoon minced fresh chives or sage
1/2 teaspoon salt
1/4 teaspoon pepper
Serves 6
1. Bring a large pot of water to a boil over high heat. Add the corn; reduce the heat to medium and cook for 5 minutes. Immediately remove the cobs from the water with tongs. Trim the stem end of each ear, then place cut-end down on a board. Using a sharp knife, cut carefully down the cob to remove all of the kernels. Repeat with remaining ears. Each ear should yield about 1/2 cup of kernels.
2. In a medium saucepan, bring the water to a boil. Add the lima beans; cover and cook for 8 minutes. Drain.
3. Return the saucepan to the stove and melt the butter over medium heat. Add the corn kernels, cooked lima beans, chives, salt and pepper. Cook for 4 minutes. Serve hot.

Well, I absolutely adore blue bell ice cream, but I knew that was going to be really hard to give up. I have some on my cheat nights occasionally and I have found that it isn't all that I remember it being. It is still yummy, but not something that I feel like I have to have or I am going to hurt somebody like I used to.........I do really miss putting butter on everything that would taste good with butter! LOL.........I am silly! Hugs
