Well after the guest departed New Years Eve, I took the platter of leftover veggies added it to my slow cooker(this was at 2am LOL), added onions, garlic and water and let it creat a wonderfull vegetable soup base while I was sleeping.. In the morning I pureed the veggies then added toamato sauce, cilantro and some cracked wheat and some more frozen veggies to finish a nice veggie soup...Once cooled I divided it into 1 serving containers and froze it. Later when we came back from friends, I added the turkey bones, celery, onions and garlic to the slow cooker, added water and let this cook overnight to create a base for turkey soup, in the morning I starined and defatted this stock and added brown rice, veggies and turkey meat to finish the soup...I also divided it into 1 serving containers and froze...Between the 2 soups I now have 24 low-fat/healthy soup containers in my freezer that I can pop in the microwave and have on those days I`m by myself for lunch....G
p/s in between soup I`ve also did a seafood stock(didn`t want to waste those thawed shrimps etc..) cause we need the seafood stock for making a Jambalaya for Super Bowl...I`ve never made it before and have been researching recipes and my lucky star has provided once again...I was looking thru my new issue of Chatelaine and they have a recipe for a low-fat one that hubby agrees with me that it looks real good....G
