After seeing the recipe on the post, I decided to give it a try with a twist of my own...I cubed a large yam(or sweet potatoe we can only buy the one kind but always get the name confused)
Added it to oven-proof dish that had been sprayed with olive oil using a oil pump spray bottle, then added diced onions, diced celery and a garlic clove still in the skin for a milder flavor...I sprinkled it with a bit of cayenne pepper and little more oil and put it in the oven at 350F to roast stirring once in a while, I roasted them only until they were cooked but not mush...Well My husband kept asking for more and although I`ve only started eating them myself in the last 3 months or so(not mashed with sugar way too sweet) I really , really liked the combo of sweetness with garlic and cayenne pepper taste. IT`S A KEEPER my husband told me to write it down for when he wants to make it. B.T.W. these were part of a meal that included a pork tenderloin roast that I marinated overnight in i cup of O.J. half a tsp. of cumin and a minced garlic. I just put everything in a large ziploc...One trick I`ve learned is to let the meat sit for 10 minutes once it`s cooked before slicing...Man oh man was it ever juicy and tasty!!! My "not meat lover kids" went back for more...A green salad finished the meal quite nicely...G

Sounds delicious but yams are carbo aren't they, so I'll try it on my days off the no carb diet.I let my meat sit too. I cook my turkey in a in oven bag it comes out moist and succulent too.

Thanks for sharing your recipe. It sounds delish! Isn't it great when the whole family likes something! I really need new recipes I feel like I'm learning how to cook all over again & and I'm getting tired of the same old thing.

Yams falls into the "better choice" category...The reason I introduced it to my healthy eating lifestyle is because of the vitamin A,C, B6,B12, potassium etc...Factor..Many people eat bananas for potassium but I can`t eat them...I never did like the yams when they were done as the traditonal turkey side dish with tones of cream and brown sugar etc..Often just nook in the microwave with salt and pepper as part of lunch...
