thought i would start a thread for good seasonings and sauces...

it seems like all the prepackaged seasonings have TREMENDOUS amounts of salt... and sauses are fatty and sugary and salty!!!


so here are three of my fav sauces... i like the rasberry one on chicken or pork...



do you have any good sauces????


Basic Taco/Fajita Seasoning
1 tablespoon chili powder
1 1/2 teaspoons cumin
1 teaspoon black pepper
1 teaspoon salt [much less... or none]
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes (or pinch of cayenne, to taste)
8-10 servings 1 ounce
1. combine all ingredients and store in an airtight container

[use with about 3/4 c of water for 1# of chicken/beef/pork and make fajitas or tacos]


Homemade Italian Seasoning
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon savory
1 teaspoon marjoram
1 teaspoon basil
1 teaspoon sage
1 teaspoon rosemary
1 jar 5 minutes 5 mins prep
1. Mix well and store in airtight container.


[really good on chicken.... mix with a little olive oil makes a great marinade]


Raspberry Orange Sauce

2 cups fresh raspberries or frozen raspberries
1/2 cup orange juice
1/3 cup granulated sugar
1 tablespoon cornstarch
2 tablespoons cold water
16 servings
1.Combine raspberries, orange juice and sugar in saucepan.
2. Bring to boil, stirring constantly.
3. Dissolve constarach in water.
4. Add to pan and cook stirring for 2 minutes.
5. Chill sauce until cold, about 15 minutes.

I'm not fond of prepackaged foods either but one exception I make is canned chicken broth with herbs.
You take a small round casserole and fill it with baby carrots. Cover with the broth and bake for about an hour. It's delicious and almost no fat! And it's an extra vegetable ;)
