does anyone have any lowfat-low cal recipes for rice dishes? I hate plain rice.

I sometimes squeeze lemon juice over brown rice or sprinkle on some Butter Buds. Also, you can boil it in chicken broth or beef broth. I'm sure there are tons of better recipes out there, but they don't fall into my EFL plan.

I sometimes boil the rice in chicken broth.
I sometimes put in a little shredded cheese and chopped green chilies. That is pretty good.

You could make lowfat fried rice. In a teflon-coated pan, you don't need any oil to fry the rice. Just boil some rice (could boil in chicken broth as suggested by BFL and Rhonda). Before it's ready, fry an egg in your non-stick teflon-coated pan (I should sell these things - ha ha), toss some chopped onion and zucchini in (if you like) and fry until they're soft. Then put your rice in. Add soya sauce and I sprinkle a bit of chicken broth on too (just a little or it will be much too salty - I just tried doing this last time and liked it) and stir it up in your pan!
Not much of a difference in calories from your regular rice, but tastes completely different and you don't need any extra oil at all.
It went over well in my household. Hope you like it.
