The following recipes were served at our ARD meeting for TOPS to almost 100 people and everyone loved it. My hubby went back for seconds.
Mexican Casserole
1/2 Cup cooked brown rice
1 - 11Oz. can sweet corn, drained
1 - 14.5 OZ. can stewed tomatoes
1 - 4 OZ can green chilies, diced
1 - 16 Oz. can pinto beans, drained
1/2 green pepper and 1/2 red pepper, chopped
1 clove garlic, chopped
1 stalk celery, chopped
1 lb. cooked lean ground beef
2 TBSP chili power
tabasco to taste, optional
1 bag low fat shredded cheese
Reduced fat sour cream
Preheat oven to 350 degrees. Mix all ingredients except cheese and sour cream. Put ingredients in 9 x 13 casserole dish and top with cheese. Bake 10 minutes or until cheese is melted. Then serve with sour cream, if desired. (Vegetables will be crunchy.) Makes 12 servings.
One serving: 222 Calories
Blueberry Squares
1 pkg Angel Food Cake mix (14.5 ounces)
22 oz. light fruit pie filling, blueberry ( I think cherry pie filling would be good too)
Preheat oven to 350 degrees. Combine ingresients. Pour batter into an yngreased 9 x 13 inch baking dish. Bake for 30 minutes. Cool and cut into 24 pieces.
Serving size: 1 piece @ 87 calories

Here's one even my two small children love,and it's low fat!
Chocolate Parfait
1 pkg FF SF choc pudding mix (small box)
FF Cool Whip (small container)
2 whole Red Fat graham crackers,crushed
Prepare pudding using skim milk.Layer crumbs,pudding and cool whip twice.You can put this in one large container or into 4-6 small cups/bowls. Enjoy!
