Homemade Sour Cream
Try this instead of sour cream on beans, vegetables, fruit,
and tortillas.

2 tablespoons skim milk
1 tablespoon lemon juice
1 cup low fat cottage cheese

1. Place all ingredients in a blender, and combine on
medium-high speed until smooth and creamy.

Serve with Tropical Fruit Compote (see page 53) or any
recipe that uses sour cream.

Yield: 8 servings
Serving size: 2 1/2 tablespoons
Each serving provides:
Calories: 27
Total fat: Less than 1 g
Saturated fat: Less than 1 g
Cholesterol: 2 mg
Sodium: 117 mg
Calcium: 24 mg
Iron: Less than 1 mg

Hey, that sounds kinda good. I do something a little similar with cottage cheese, I mix it up with mashed avocado and make a 'fake' guacamole.

I have to try it myself as soon as I buy more cottage cheese...Fake guocomole sounds better then the suggested brocomoli I came across a while back and tried ..IT was discusting!!! It was a mashed broccoli made to be like guacomole..YUK!!!!

Oh gross, lol.

I just mix mashed avocado with my fat-free cottage cheese together and voila, fake guacamole. It's really good, too. You can add other flavoring and spices, like garlic and the like. Sometimes I add chopped fresh cilantro.
