Hi Anita,
Usually the recipe will tell you how many servings are in it (for example, "4 servings"). What this means is that a serving is the total recipe divided by the number of servings (if it's 4 servings, then the serving is one forth of total quantity of food that came out of the recipe).
The breakdown of calories and fat in the recipes is normally for one serving, not for the whole recipe.
My Practical Weight Loss book comes with a cookbook that has lots of healthy recipes that are really simple and easy to prepare. It has recipes of salads, meat dishes, fish and seafood, side dishes, vegetarian main dishes, sandwiches and wraps, breakfast ideas and desserts. All recipes have nutritional information.

Best regards,
Melanie

If they don't tell you the number of servings, there is no way to know what they mean by a serving. Most commonly the recipes are 4 servings, but again, you can't assume that that's the case here.
