OK, I am eating a lot of chicken breast and sometimes get bored with it so...I thought I would try to make it differently!
I cooked my chicken breast strips(I buy the frozen,tenderloin strips, they are much easier) in a large soup pan and added my favorite seasonings...minced onion, pepper, and a pinch of salt.Then added a can of corn,a can of beans and a can of mushrooms.(I rinse them all first to get rid of some of the sodium) Next I added 4 small cans(4 cans of water too!) and 2 larger cans of my favorite lowfat soups. I also through in some carrots. Sometimes if I have cauliflower and broccoli,I will throw them in too. I simmer this for about an hour. It makes enough to feed me for the entire week at lunch time and it is very filling! All together the soup that I made had 2155 calories total and and 34.5 fat grams.(Remember it is a huge soup pan!) So let's say I eat that for 5 days for lunch...that is 431 calories per serving and 6.9 grams of fat per serving! I don't think that's too bad at all! AND it tastes really good too!

Since you buy chicken strips, here is another idea brown 2oz in non stick pan with seasonning then add to salad of choice with 1 tbsp of dressing.
Or once cooked, diced the chicken and add to romaine lettuce with red peppers, onions etc, place in half of whole wheat pita with a little dressing such as Shanen`s dressing....Those also make good healthy lunches....

another soup---no fuss:
Cream of Broccoli
3 cups of canned low-fat free chicken broth
11/2 cups fat-free evaporated milk
1 broccoli
1 baked potato peeled and into 1 inch cubes
a cup chopped onion
1/2 cup celery
3 cloves garlic chopped
1/2 tsp salt
1/4 tsp ground red pepper
Combine all the ingredients in a large heavy saucepan and bring to the boil over medium-high heat. Stir it occasionally. Cover, reduce heat and simmer for 30 mins stirring occasionally.
Process the mixture in batches in a food blender until smooth. Reheat in a saucepan when needed. This soup stores for up to 3 days in the fridge or in the freezer for up to a month.
Does about 7 servings altogether of 1 cup each serving.
