My sister-in-law gave me this recipe. It was a thumbs-up with the entire family.
Enchilada Casserole
Use LaTortilla low-carb wheat tortillas (orig). Spray 13X9 cake pan with Pam. Line the bottom of a cake pan with the tortillas (3 per layer), put your cooked hamburger next, 1/2 a small can of sliced olives, then enchilada sauce of choice, then some cheddar cheese (fat free if you wish). Repeat layers. Cook in 350º oven for 15 minutes covered with foil, remove foil and cook 10 more minutes.

I've done similar enchilada casseroles to this (just kinda made up the recipe myself)... but I used ground 99% fat free turkey.... or shredded chicken. When using chicken or turkey the best enchilada sauce to use is the green sauce

I like to use the 97% lean ground beef for tacos, enchalidas, etc over the chicken. After I brown it I rinse it with a strainer in water and pat it with paper towels and get most of the rest of the 3% fat off :) And I don't like the taste of ground turkey no matter what I cook it in!

No offense, but regular cheese, ground beef, anf olives are all high-calorie foods, so if you fix it that way I hope you eat very, very, small portions :-)

Actually, I always know how many calories are in everthing I eat, which is why I make this stuff at home so I can manipulate what's put into it. I'll include nutritional information with all my recipe posts in the future so there is no confusion.
If you use the small LaTortilla wheat tortillas, 1 pound of 96% hamburger, 6 oz. fat free cheese, 1 15-oz can of mild enchilada sauce (mine was HyVee brand), and just a few tablespoons worth of black olives.........the entire 13X9 pan's worth of calories is only 1236 calories. I couldn't eat more than 1/6 of the pan at any one sitting ever, so that would be only 206 calories for my entire dinner.
It's all in how you make it. It would be much higher using higher fat (and higher quantities) of hamburger, full-fat cheese, and too many olives--a few will do. Now if you use real corn tortillas, forget it, LOL. Read labels and figure out what you put in any dish, and most recipes can be manipulated to be more healthy.
