I love eggs so I'll start.
egg salad .... if you discard a yolk and use ultra low fat miracle whip, it has less calories and fat than if you'd simply eaten the two eggs.
fritata .... saute up some veggies ... onion, pepper, zucchini anything you like. pour over this your egg mixture (one whole & one white with a drizzle of water) gently cook. When the top is still wet but the rest is done, pop it in a hot oven. It'll puff up a bit. Crumble some low fat feta over the top while it's still hot. Very nice, very filling.
