Hi Ya,
I eat cereal and fruit most mornings, and I'm not sure why, since this morning, the children and I had a delicious breakfast that was low in fat and calories, but gave us rather a lot of fiber, a bit of iron and calcium, and some vitamins too! This is what we had (just the 3 children and I, since their father has to work today), and it was LOVELY!!
First, I grilled 4 veggie burgers (which we decided to have today in place of "real" sausage patties) in the oven, and they have 100 calories each, 4 grams fiber, 3.3 grams fat, and 0 saturated fat! While they were cooking, I fried an egg for each of us in a small non stick pan, and our eggs have no more than about 70 calories each, since the advantage of having a flock of hens is that I can pick out the smaller eggs for us! What would a patty and an egg be without either a waffle or a pancake, eh, so I made a lovely waffle for each of us!! I toasted a frozen whole grain blueberry waffle for each of us (they have 100 calories each, and 3 grams of fiber), and cooked one cup of frozen blueberries (only about 25 calories in each 1/4 cup since there were 4 of us to share them) in a little pan until they were soft and warm, at which time I mashed them into their own juice. To assemble the waffles, I put 1/4 of the mashed blueberries (and the juice) on each waffle, drizzled over each one a spoonful of real maple syrup (an indulgent 50 calories), and topped each one with a big spoonful of unsweetened plain non-fat yogurt (no more than about 25 calories each.) The kids loved everything, and the whole breakfast (even including that yummy maple syrup) only weighed in at 370 calories each! I could have substituted a teaspoon of sugar on my blueberry waffle, instead of a tbsp of real maple syrup without sacrificing too much taste, but wowee, maple syrup is lovely! You know what, I think we sometimes (on a diet, I mean) forget that there is more to breakfast than a bowl of oatmeal and a banana!!! Have a great weekend...my husband has to work today, but tomorrow, we're all going to spend the day at the County Fair (we've been every year since we were married almost 15 years ago, and the kids went the first time as little babies, and really love it, especially the pig racing, and the animal barns!!)
