I went to the fruit and veggie market today...I always buy feta or some kind of cheese from this popular cheese stand. Today, I asked the gal, which cheese has the most protein. She responded with 'cheese curds'. So, I picked up some, GARLIC flavored, YUM, to go on my salads at work. My dilemna is, what are the stats on something like that? It was a hard curd...fresh...handmade...when I looked up cheese curds, I only came up with cottage...
What do you think?

I'm not certain, but it seems like on an episode of Emeril Live, where he made cheese, the curd was something you get in the process - Not actually cheese. Don't know...when he was doing it he was talking about curds and whey which of course reminded me of Little Miss Muffet sitting on her tuffett eating her curds and whey. You could probably look up the episode on Foodtv.com

Found this: Cheese curds are fresh, young cheddar cheese in the natural, random shape and form before being processed into blocks and aged. (Cheddar cheese is typically aged from 60 days to 4 years before being sold.) Unlike the aged variety, curds lose their desirable qualities if refrigerated or not eaten for a few days (the squeak disappears and they turn dry and salty). In this case would imagine the fat/calorie content is pretty close to the "real thing."
There is also a Cheese Curd Festival (!) held in Ellsworth, Wisconsin the end of June.
